How to make Soychunks fried rice
Step-1
1. Soak 60g (or as per your requirement) soy chunks in hot water for at least 10-15 min, then drain the water. Shred the chunks using hand or pulse them in a mixer (this is the best option)
2. Add 2.5tsp oil to a pan (approx 10g)
3. Once the oil is hot, fry the spices. This is optional. Spices - 1 small bay leaf, 1 cardamom, 1 medium stick of cinnamon.
4. Tempering : Add 1 tsp of Cumin seeds, 1/2 tsp of mustard seeds and 2-3 green chillies. Optional : 1/2tsp urad dal and 1/4th onion.
5. Once the tempering is fried enough add 1/2 tsp turmeric
6. Add shredded soy chunks and fry for a min
7. Add 1 tsp salt, 1 tsp red chilli powder and 1 tsp coriander powder
8. Fry for a min or two
9. Add cooked rice (60-80g as desired)
10. Add handful of chopped coriander and fry this for 2 min. Switch off the flame.
11. Best served with a tomato rasam on the side.
Note: you can add green beans or carrots or any other veggies as you wish
