Soy Milk Cake
- Soy milk powder- 20gm
- Olive oil- 20gm
- Oats- 40gm
- All purpose flour- 20gm
- Baking powder- 1 tsp
- Zero calories sweetener- as per the taste (I used 9 tablets of stevia)
- vanilla syrup - 1 tsp
- apple cider vinegar(acv) - 1 tbsp
- salt- a pinch
- Chocolate syrup - 1tbsp
- cashews- 7gm
Take 20gm soy milk powder and add 250ml water and whisk it nicely. Thereafter, add acv and stir it.
Grind the oats in mixture and mix it with all purpose flour, baking powder and pinch of salt.
Now to the soy milk add vanilla extract, olive oil and sweetener and mix it nicely.
Add all dry and wet ingredients in a bowl and whisk it nicely so that there are no lumps
Grease the baking tray with olive oil and dust some flour and tap it so that it gets evenly distributed.
Now pour in the mixture and bake it for 30-35 minutes on 160°C or until you get clean toothpick when inserted.
Take it out and let it cool down. Make some holes using the toothpick and pour in the chocolate syrup (vegan) and top it with your favourite nuts. Keep it in refrigerator and eat when it's chilled!
