Ingredients

Olive oil: 15 gm

White onion, diced: 150 gm

Red onion, diced: 75 gm

Green bell pepper, diced: 120 gm

Pickled jalapenos, diced or whole: 35 gm

Lime juice: 30 gm

Taco seasoning: 30 gm

Vegetable stock: 900 ml

Tomatoes, diced: 800 gm

Corn: 75 gm

Black beans: 250 gm

Tomato paste: 30 gm

Mixed vegetables of choice, chopped(optional): 145 gm

Salt and pepper: To taste

Optional toppings: Macros not included

Shredded cheese

Tortilla chips or strips of fresh tortilla

Sour cream or plain Greek yoghurt

Avocado chunks

Tomatoes, fresh, diced

Cilantro, fresh, chopped

Method

Step 1

Heat a large pot over medium-high heat and add the olive oil, onions, bell pepper, jalapeufos, lime juice, and taco seasoning. Sautue until the onions soften.

Step 2

Reduce the heat to medium and add the vegetable stock, diced tomatoes, corn, black beans, tomato paste and chopped vegetables.

Step 3

Stir everything together well and let simmer on medium-low for about - minutes, stirring every now and then.

Step 4

Serve with whatever toppings you wish!
