cardamom - 1 brown, 3 green
asofoetida - 1 pinch
cinnamon - 1/2 stick
aniseed (saunf) powder - 1 tbsp
dry ginger powder - 1/2 tsp
bay leaf - 1
Powder aniseed (saunf), puree tomatoes
In a pan, shallow fry paneer with - g mustard oil till golden brown
take a bowl of water, add a pinch of asofoetida and soak the fried paneer in this
add remaining oil to the pan and season with bay leaf (), green cardamom () , brown cardamom ()
add the tomato puree and cook till oil separates
add salt, turmeric powder, chilli powder as per taste
squeeze excess water from the soaked paneer and add it to the fried tomato masala
add tablespoon of aniseed (saunf) powder and mix well
add the water in which the paneer was soaked and bring to a boil, and let thicken for mins
enjoy with rotis/ rice!
