Ingredients

  • Recipe Ingredients listVeggies of your choice - I used around 400gms veggies
  • Recipe Ingredients listCoconut Milk - 83ml
  • Recipe Ingredients listThai Red curry paste - 1-2 tsps.Based on the paste you are using.
  • Recipe Ingredients listolive oil - 5 gms
  • Recipe Ingredients listsalt, pepper, coriander leaves, lemon
  • Recipe Ingredients listTofu - 100gms
  • Recipe Ingredients listgarlic -10gms (optional)

Direction

Step-1

Heat up olive oil in non stick pan.

Step-2

Slightly Fry Tofu in the oil and take it out in a bowl.

Step-3

Add garlic and veggies in the same pan. Add salt and pepper.

Step-4

Add coconut milk, thai curry paste and stir. Coconut milk I used was a bit thick so I added water for adjusting consistency.

Step-5

Let it simmer on low flame for about 4-5 mins. Add tofu to it.

Step-6

Serve with coriander/thai basil. Add lemon for more flavour.
