Red Thai Curry
- Veggies of your choice - I used around 400gms veggies
- Coconut Milk - 83ml
- Thai Red curry paste - 1-2 tsps.Based on the paste you are using.
- olive oil - 5 gms
- salt, pepper, coriander leaves, lemon
- Tofu - 100gms
- garlic -10gms (optional)
Heat up olive oil in non stick pan.
Slightly Fry Tofu in the oil and take it out in a bowl.
Add garlic and veggies in the same pan. Add salt and pepper.
Add coconut milk, thai curry paste and stir. Coconut milk I used was a bit thick so I added water for adjusting consistency.
Let it simmer on low flame for about 4-5 mins. Add tofu to it.
Serve with coriander/thai basil. Add lemon for more flavour.
