How to make Quinoa & Chickpeas Salad
Step-1
Boil Quinoa as per packet instructions
Step-2
Boil soaked chickpeas in pressure cooker - 7 whistles
Step-3
Meanwhile finely chop the vegetables and make the dressing in a small bowl - 5g olive oil, juice of one lime, crushed garlic and pinch of salt. Mix well
Step-4
Once the Chickpeas and Quinoa are ready add all veggies and the dressing.
Step-5
Done.
Eat right away or store in the fridge to consume later.
You could also add feta cheese at the time of eating if it fits in your macros.
