  • Recipe Ingredients list50g Chickpeas
  • Recipe Ingredients list100g veggies - red and yellow peppers, small onion, coriander
  • Recipe Ingredients list5g Olive Oil
  • Recipe Ingredients listJuice of a lime
  • Recipe Ingredients listOne clove of garlic crushed
  • Recipe Ingredients listSalt as needed
  • Recipe Ingredients listAny other herbs if you like - dried Parsley goes well

Direction

Step-1

Boil Quinoa as per packet instructions

Step-2

Boil soaked chickpeas in pressure cooker - 7 whistles

Step-3

Meanwhile finely chop the vegetables and make the dressing in a small bowl - 5g olive oil, juice of one lime, crushed garlic and pinch of salt. Mix well

Step-4

Once the Chickpeas and Quinoa are ready add all veggies and the dressing.

Step-5

Done. Eat right away or store in the fridge to consume later. You could also add feta cheese at the time of eating if it fits in your macros.
