Puli Kuzhambu (Tangy curry)
- 200 gm Okra(Any Vegetable)
- 80 gm Onion
- 40 gm Tomato
- 15 gm Tamarind
- Sambar Powder / corriander powder/ Turmeric/ salt
- Mustard seeds/ Jeera seeds/ Methi seeds
- Curry leaves
- 15 gm Garlic
- 10 gm oil
Soak tamarind in a little warm water in bowl.
Take a bowl/ pan place on low flame. Add in oil once hot add cumin, mustard, fenugreek seeds. Next goes in onions cubed, garlic whole pods( no need to chop) , curry leaves.
Let it fry once onions are soft add in bite size chopped okra add fry till all the stickiness goes away.
Next add tomato add spice powder (4 tsp of sambar powder+ 1tsp of corriander powder or 1tsp red chilly powder + 3 tsp of corriander powder)
Mix add water till the mixture gets covered now cook in medium flame till all the vegetables soften. (Takes about 5-6 mins)
Now add in tamarind water/ paste. Mix and cook till it thickens and you get the desired consistency.
Finally adjust salt and spice. Serve with steamed rice.
