Paneer pesto pasta
- Olive oil 5 gm
- 10 gm garlic
- 50 gm tomato
- 15gm sweet corn
- 30gm whole wheat pasta
- Cheese cube 1
- Crumbled cottage cheese 100gm
- Capsicum 30gm
- 100gm spinach choppped & blanched
- 25gm basic leaves
- Roasted Peanuts crushed 15gm
Make a puree with garlic, tomato, basil leaves and spinach with salt, green chillies, lime juice and water.
Boil and strain pasta.
In a pan, add olive oil, add the pesto sauce, capsicum, sweet corn. Toss well and add half of the paneer and half cheese.
Add little water, salt, black pepper powder and mix well. Add roasted peanuts and the pasta.
Add lime juice at the end. Once done, serve with remaining grated cheese and paneer.
