Ingredients for paneer cup cakes (serving size 7 medium size cupcakes)
- › Paneer 250 grams,
- › Sugar free substitute ( 20 grams)
- › 2 teaspoons rose essence ( rose water)
- › 2-3 cardamom pods whole
- › 50 grams dry fruits ( almonds , pistachios and cashews)
- › 6-8 strands of saffron
- › 1/2 tsp baking powder
- › 100 grams suji ( fine semolina)
- › 100 ml of milk ( or more to make cake batter consistency)
- › For Rabri topping 1/2 litre milk reduced to thick Sweetener 20 grams
Method
1. grind the paneer, sugar substitute, rose water , cardamom pods , dry fruits and saffron strands in a blender jar and blend smooth purée Now transfer in a bowl and add baking powder and of sooji. Add milk to bring it to cake batter consistency and leave for 10 -15 minutes, then stir again and bake in preheated oven for 20-25 minutes at 180 degrees. Top it with instant Rabri ( 1/2 litre of milk reduced to paste like consistency) Chop some dry fruits and saffron and garnish
