Palak pudina rice with chicken
- Rice =55gms
- Palak = 100 to 120gms
- Pudina= 20gms
- Chicken= 200gms
- Ghee =15gms
- Whole spices
- Coriander, Red chilli, turmeric, garam masala, geera powder, hing ,salt - As per taste
- Badam =4-5 pieces
- Green chilli - 2 to 3
- Ginger garlic paste -1tbsp
- Onion and tomato - 40gms each
Wash all greens (coriander, mint and palak), chop and grind them with green chilli and badam and make puree
Take ghee in a pan, add whole spices sautee well and add onions
Once they turn nice and brown, add in the ginger garlic paste fry for few secs and then add tomato wait till they become soft and then add the puree, cook for 5-6 mins till it turns colour.
Add in all masalas and salt as per taste, cook for another 10 mins, till it reduces and thickens.
Then add in chicken with some water into this and let cook with lid closed till chicken is almost done.
Finally add the washed rice with enough and cook it covered untill 3/4th done
If u think water is excess open lid and cook the rice, so the excess water evaporates
Garnish with some fried onions if fits in macros
Serve with curd
