How to make oven baked Amritsari aalu kulcha
Boil the potato in cooker with turmeric powder and salt. Smash the boiled potato , add chopped onion, coriander, chilli and ginger. Add spices mentioned above and mix nicely . Make 6 balls of medium sized potato balls
For dough- use warm water 1 cup, add 2 tspn yeast and let it rest for 10 mins to let it bubble. Add the wheat flour and salt and 2 tbspn oil and knead the dough or you can use stand mixer. Add 1 tspn oil to dough and let it rest until it doubles. Divide the dough into 6 balls.
Flatten the dough little , add the potato ball and cover with the dough. Flatten this further with fingers into medium sized round rotis. On top of the roti, add chopped onion, coriander seeds, coriander leaves and sprinkle some chilli powder.
Pre heat the oven at 500 degrees F( or 250 Celsius ) . Keep the flattened kulcha in a pizza dish and put it in for 8 minutes.
Add small piece of butter on each kulcha ( optional) and enjoy hot with Chole or pickle
