New Year Sponge Cake
- Wheat or refined wheat flour 100g
- Eggs 2
- Unsalted Butter 100 g
- Almonds 5g
- Cashews 5g
- Baking powder 1tsp
- Vanilla essence 2-3drops
Beat butter at RT, stevia, erythritol.
Add eggs and beat. Check sweetness here and add more stevia n erythritol until u get your desired taste. Add vanilla essence drops.
Mix baking powder and flour well.
Slowly add flour while whisking and until all the flour is mixed well.
In a silicon mould, layer with almonds and cashews and pour the batter and make it even.
Place in the airfryer and bake at 160°C for 25-30mins. Check if the cake is done using a knife or toothpick.
And let your house fill with the baking aroma. :-D
After bake, the whole cake weighed 300gms and made 15 pieces. Each piece weigh ~20gms
Per 20gms of cake - 87 Calories P 1.8, C 5.4, F 6.5
P.S You can chose to add 50gms almond flour along with wheat flour for almond cake.
