Ingredients

Whole eggs - 3 spinach - handful of chopped leaves or baby leaves onion - half small onion finely chopped mushrooms - 4-5 ( sliced) ghee/butter/oil - 5gms milk -1 tbsp (optional) Salt and pepper (as per taste)

Method

Step 1

Pre heat the oven to degrees. In the meantime, Add ghee/butter/oil in the pan and let it heat on the stove. Add onion to the pan and saute for minutes followed by mushrooms and then spinach. Both mushrooms and spinach tend to release some water while cooking, so cook on high flame and let all the water dry out. In the meantime add whole eggs in a bowl, add milk (optional) salt and pepper and whisk it well. Add the eggs to the pan give it a little stir and put the pan into a pre heated oven and let it cook for - minutes. A lovely fluffy baked omelette is ready. Note: you can also cook it completely on the stove instead of baking in oven, just cover the pan with a lid to have a fluffy Omelette. The macros of the veggies are not included.
