Ingredients

  • Recipe Ingredients listDal - Besan/gram flour - 140g
  • Recipe Ingredients listCurd - 100g
  • Recipe Ingredients listGreen chilli paste - to taste
  • Recipe Ingredients listGinger paste - to taste
  • Recipe Ingredients listBaking soda/eno fruit salt - 1 tsp
  • Recipe Ingredients listLemon juice (if using baking soda) - 1 tbsp
  • Recipe Ingredients listTurmeric powder /haldi - 1/2 tsp
  • Recipe Ingredients listGhee - 10g
  • Recipe Ingredients listMustard seeds - 1 tsp
  • Recipe Ingredients listCoriander leaves chopped - 2 tbsp

Direction

Step-1

Sift in besan along with salt, haldi, then add curd and mix till you get idli batter consistency. Can add little water if needed.

Step-2

Now add the ginger-green chilli paste and mix till combined Can let it sit for half an hour if you have time

Step-3

Keep the container ready. I used a glass container lightly greased with ghee

Step-4

Now add eno and mix few times quickly, it will bubble up. If using baking soda, then add baking soda and lemon juice instead of eno Quickly transfer to the container

Step-5

Best to steam in steamer, if short of time can microwave for 7-10 mins

Step-6

Check with toothpick if done else keep for some more time

Step-7

For tadka, add the ghee, mustard seeds, coriander leaves in this order. Finally add some water and add it all on the dhokla

Step-8

Only disadvantage with microwave was that the corners came out a bit hard
