Quinoa, raw: 80 gm
Mushroom: 30 gm
Sweet corn kernels: 25 gm
Rajma: 30gm
Olive oil: 15 gm
Carrot: 1/2 or 30 gm
French beans: 5-6 or 15 gm
Broccoli: 4-5 florets or 30 gm
Sliced olives: 4-5
Coriander leaves: 1-2 tbsp
Cumin powder: 1/2 tsp
Salt: To taste
Lemon juice: 1 tsp
Red chilli powder: 1/2 tsp
Onion: 1
Garlic: 2 cloves
Spring onions greens: 1 tbsp
Chilli flakes: 1/2 tsp
Mexican or peri peri seasoning: 3/4 tsp
Take quinoa ,wash it thoroughly in running water.
Take little oil in cooker, saute the quinoa for - minute .
Add ml of water and salt to it. Cook to the texture just short of being completely cooked.
Drain off the excess water and transfer to a large plate and fluff it with fork.
Heat oil in a pan; add onion, garlic to it.
Now add in carrots, beans, broccoli, and salt. Cook till vegetables are almost cooked.
To this add rajma, corn, olives, cumin powder, red chilli powder, chilli flakes, peri peri seasoning.
Add in cooked quinoa, lemon juice, coriander leaves, spring onion greens. Mix all well and serve hot.
