How to make Mango rabdi from leftover rotis
Tear the rotis in small pieces. In a nonstick pan, add half the ghee and fry the rotis.
Take out the rotis in a blender, add 1/4the milk, add chopped mango pieces (keep some for garnishing) and blend well.
In the same nonstick pan, add ghee, roast cashews and add milk. Put in low flame and let it thicken a bit. Now add the roti & mango pulp in this. Mix really well for a few minutes.
Add stevia/sweetener as per choice. Now add mango essence drops. Stir well. In the last step, add the chia seeds.
Take them out in a bowl and freeze them for 10mins. Take it out, add remaining cashews and mango. Enjoy your dessert!
