Loaded Sweet Potato Fries
- Sweet potato chips : 750 g (frozen)
- Taco seasoning : 1 tbsp
- Black Beans : 400 g (rinsed and drained)
- Cheese : 180 g (grated)
- Tomatoes : 350 g (chopped)
- Red Onion : 1/2
- Coriander Leaves : 2 tbsp
- Lime Juice : 1 tbsp
- Avocado : 1
Preheat the oven at 220 degrees. Line a large baking tray with baking paper. Arrange the sweet potato chips in a single layer on the lined tray.
Sprinkle with the taco seasoning. Bake for 15 minutes. Turn the crisp and heat it through.
Sprinkle black beans and cheddar cheese evenly over the chips on the tray. Bake for 5 minutes or until cheese melts.
Meanwhile, combine the tomato, onion, coriander and lime juice in a medium bowl.
Transfer the chip mixture to a serving bowl. Top with the tomato mixture and avocado. Season with taco seasoning.
