Ingredients

Falafel Mix:

Chickpeas: 60gms | Flour: 20 gms | Cumin: 1 Tbsp | Coriander seeds: 1 Tbsp | Onion powder/ chopped onion: 1 Tbsp | Red chili powder: ½ Tbsp | Black pepper powder: ½ tsp | Salt: as per taste | Olive Oil: 4 gms (to brush)

Moutabel/ Mtabbal (Spicy eggplant dip):

Eggplant: 1 no. (big) |Garlic clove: 4 nos. | Tomato: ½ piece | Lemon juice: 1 Tbsp | Black pepper powder: 1 Tbsp | Olive oil: 5 gms (garnish)

Hummus:

Chickpeas dry: 50 gms (boil it) | Garlic clove – 2 nos. | Salt: to taste | Lemon juice: 1-2 Tbsp | Olive oil: 5 gms (garnish)

Pita Bread:

Flour: 130 gms | Salt: ½ tsp | Stevia/ Sugar free: 1 tsp | Baking powder: 1 tsp | Olive oil: 10 gms

Method

Step 1

For Falafel:

Step 2

Blitz the chickpeas in a high-speed blender until course flour

Step 3

Add to a bowl with the remaining ingredients and mix

Step 4

Add boiling water (equal parts to the dry ingredients) . Eg: If you have cup dry ingredients, then add cup of boiling water

Step 5

Sit for up to mins so the mix absorbs all the water

Step 6

Roll into balls and bake them for mins at C (flipping it in middle). Use olive oil to brush both the sides.

Step 7

For Moutabel/ Mtabbal (Spicy eggplant dip):

Step 8

Apply oil to the skin of the eggplant and roast it on the gas. Let it cool before peeling the blackened skin.

Step 9

Add the roasted eggplant, garlic, lemon, tomato, salt and pepper. Blend until smooth.

Step 10

Transfer in a bowl, garnish with olive oil and pomegranates (optional)

For Hummus:

Put boiled chickpeas (drain the excess water) in a blender along with garlic, salt, and lemon juice.

Step 13

Blend until smooth (can add few spoons of water depending upon the consistency) and garnish it with olive oil and pinch of red chili powder.

For Pita Bread:

Add all the ingredients and knead a soft dough with luke warm water. Let it rest for - mins

Step 16

Divide the dough in equal parts and make balls. Roll the ball into circles of / inch thickness.

Step 17

Ball the rolled dough in C preheated oven for - mins.

Step 18

For Platting:

Step 19

Cut carrots and cucumbers into finger size pieces.

Step 20

Assemble everything in a plate and enjoy!!
