Herbed rice with chicken and veggies
- Chicken breast boneless- 100 gm
- Rice- 50 gm
- Egg- 1
- French beans- 50gm
- Capsicum- 50gm
- Onion- 50gm
- Tomatoes- 50gm
- Corn- 20gm
- Garlic- 8 (minced)
- Green Chilli- 2 (finely chopped)
- Butter- 10gm + 5gm ( for frying the chicken)
- Oregano, Chilli flakes, salt
Boil the rice and pan fry the chicken. Cut the chicken in small cubes once fried.
Heat butter add garlic and green chillies. Fry for 2 mins then add all the other veggies (except tomatoes) and let it cook on medium- high for 5-8 mins.
Once veggies are cooked , add egg and scramble it. Then add tomatoes and cook for 1 more min. Add the chicken pieces and mix it.
Finally add the boiled rice and give it a good mix. Add salt, oregano and chilli flakes for extra taste. Let it cook on high for 1 min and then serve hot.
Tip: don’t add the tomatoes at the start as they will get soggy. Use slightly raw tomatoes for better taste. Use lots of garlic for a really good taste.
