How to make वांग्याचा ठेचा (Grilled eggplant)

Step-1

Wash eggplant( बैगन) and brush little bit oil on outer surface of it.

Step-2

Roast it on gas ( keep it on direct flame on gas)on medium flame

Step-3

Allow eggplant to roast over flame 15-20min giving it a quarter every 3-4 min as it cooks

Step-4

Larger the eggplant longer it will make to roast

Step-5

Make sure the skin of Baigan get charred from all side

Step-6

Once it is cooked switch off the gas and keep it in dish... mash it ( I liked the burnt skin of eggplant so I didn’t remove it)

Add remaining oil in kadhai

Step-8

Add onion and roast it till golden brown

Step-9

Then add garlic green chilly and ginger( crushed all in mortar unevenly) this is called Thecha actually which give more flavor to Receipe. Add green chilly more if u like more spicy

Add remaining masala and salt

Step-11

Mash the eggplant with hands and add it in kadhai

Step-12

Mix thoroughly all the mixture .

Step-13

Keep it on low flame with lid on kadhai for next 5 min

Step-14

Now it is ready to serve with coriander on top

Step-15

U can add roasted and crushed peanuts also

Step-16

It is eaten with Bhakari /Roti/ chapati
