Ingredients for Gobhi Tikka
- › 600 gms cauliflower 2 tbspn mustard oil 2 tbspn besan Hung curd of 400 gms curd
Method
1. 1. Heat 1 litre water in a wide pan. 2. When water starts boiling add 1 tbspn salt. 3. Add 1 tsp vinegar in water. 4. Add 600-700 gms gobhi florets. 5. Cook on high for 5 mins without lid. Till translucent. 6. Drain water and rinse in cold water. 7. In a pan heat 2 tbspn mustard oil. Heat till smokes. Turn flame off. 8. Add 2 tbspn besan. Mix with whisk. 9. Add 1 tsp kashmiri red chilli powder. 10. Transfer in a bowl so that red chilli doesnt burn. 11. Add hung curd of 400 gms dahi. Hang curd in muslin cloth for 5-6 hours. 12. Add hung curd in besan mix. Whisk well. 13. Add 1 lemon ka juice. 14. Add 1 tsp dhania powder. 15. Add 1 tsp garam masala. 16. Add 1 tsp jeera powder. 17. Add 1 tsp kasmiri lal mirch powder. 18. Add 1 tsp chat masala 19. Add 1 tsp kasuri methi. 1st roast on pan. Make powder. 20. Add 2 tbspn ginger garlic paste. 21. Add 1 tsp salt. 22. Add 1 boiled potato in cubes. Take out potatoes from marination and keep aside. 23. Add all gobhi florets. 24. Do dhungar with coal and 1 tsp ghee. Keep aside for 1 hour. 25. If yoy dont have air fryer- Grill on pan with vertical lines. Pan should be smoking hot. Cook on each side for 2-3 mins. 26. Air fried at 200 degrees for 12 mins. 28. Sprinkle chat masala and lemon juice on top. 29. Serve with onion rings and lemon wedges.
