1 cup raw cashew nuts (140 g)
1 cup almonds (165 g)
1 cup sunflower seeds (150 g)
2 cups dried dates (300 g)
1 cup dried currants (170 g)
1 tsp vanilla essence (5 g)
1/2 cup desiccated coconut (38 g)
Direction
Step-1
Process the nuts & seeds in a large food processor bowl until finely chopped (maybe in batches so you don't overheat the food processor)
Step-2
Add the dates, currants and vanilla essence and process until almost smooth and sticky
Step-3
Roll into 30 small balls & coat with coconut
Step-4
There should be enough moisture from the fruit & nuts to bind everything, but if not, add a tbsp of water
Step-5
Makes 30 - macros are per ball
