3 Whole Eggs / You can take Only Egg whites as well
Potato (200gm )
Salt ( to taste)
Red Pepper
Black Pepper
Garam Masala
Cornflour/Maida/AP Flour ( 1 spoon )
Green Onion ( Optional)

Step-1
Wash and peel the potatoes.
Step-2
Cut potatoes into thin long strips ( noodle like consistency)
Step-3
Soak them into water for 10 minutes.
Step-4
Take out potato and drain any excess water from them and transfer them to another bowl.
Step-5
Now in that bowl add in all the spices,green chilli, green onions, maida/cornflour
Step-6
In the same bowl add in just the egg whites of 3 whole eggs and mix everything up well enough so that potatoes are coated thoroughly.

Take a non stick flat bottom pan and add in 10gms of oil in the plan and spread it all across the pan.

Let the oil heat up a bit on medium flame

Then take a fistfull bunch of potatoes from the bowl and add in the pan in form of a ball.

You will get max 3 balls max spread across the entire pan.

Now take a spoon or fork and gently make a hole in the center of each bowl by stirring spoon in the center.

We are making this cavity just big enough to fit in the egg yolks.

Once its done then add in egg yolk and let it cook for 2 minutes on medium flame

Now carefully flip each of them over so that topside gets cooked as well (along with egg yolk)

Flip it up 1-2 times while cooking it for 2-3 minutes ( till the eggs texture turn crunchy and golden brown)
Step-16
Take out the patties and serve them up in a plate.
Step-17
You can use tomato ketchup or green mint sauce to serve along the crunchy eggtatooes bites
Step-18
Enjoy your filling protein rich snack in just under 15 minutes.
