Eggs fried on tomatoes with Tuna

Tomatoes : 1 Large
Coconut Oil : 1 tsp
Eggs : 2
Tuna in Brine : 80 g
Oregano : a pinch
Chilli Flakes : a pinch • Parsley : handful Chopped
Direction
Step-1
Peel the tomato and chop into cubes.
Step-2
Heat the oil in a small frying pan, add the chopped tomato and fry over high heat for about 3 minutes.
Step-3
Create 2 gaps in the tomato and break the eggs into them. Season with salt and pepper.
Step-4
Arrange pieces of tuna on top, sprinkle with dried oregano and chilli flakes.
Step-5
Fry for 3 more minutes or until the egg whites are cooked. 6. Serve with fresh parsley.
Step-6
Tip: For a non-fish option replace tuna with feta.
