Ingredients

  • Recipe Ingredients list1 large tomato
  • Recipe Ingredients list1 tsp coconut oil
  • Recipe Ingredients list2 eggs
  • Recipe Ingredients list80g tuna in brine
  • Recipe Ingredients lista pinch of oregano
  • Recipe Ingredients lista pinch of chilli flakes
  • Recipe Ingredients listparsley, chopped, to serve

Direction

Step-1

Peel the tomato and chop into cubes

Step-2

Heat the oil in a small frying pan, add the chopped tomato and fry over a high heat for about 3 minutes

Step-3

Create 2 gaps in the tomato and break the eggs into them. Season with salt and pepper

Step-4

Arrange pieces of tuna on top. Sprinkle with dried oregano and chilli flakes

Step-5

Fry for a further 3 minutes or until the egg whites are cooked. Serve with fresh parsley

Tip: for a no-fish option, replace tuna with feta
