Boiled eggs- 3
Eggs for omlette- 5
Cheese - 2 slices
Onion tomato Chilli coriander
Salt, pepper, garam masala (optional)
Olive oil or ghee or butter -5 gm
Boil eggs. Peel them on cooling, and keep aside.
Chop onion, tomatoes, chillies, and coriander leaves finely.
Beat up eggs, mix salt pepper and garam masala (as per taste). Also add the chopped items from step .
Heat up frying pan, add spoonful of oil, pour half the mixture from step . Now, immediately slice each boiled egg into - pieces directly over the pan well placed, while the omlette is still raw on top. You can sprinkle any herbs of your choice over this.
Now pour the remaining omlette mixture on top uniformly covering the entire pan. All this while the omelette is getting cooked one side on low flame. You can even cover for a minute with lid.
Now very carefully, flip with wide flat flipper, trying not to break it, since little heavy. Those who like one side cooked omlette, can skip flipping(just cook for minutes covered on low flame)
Once done, put cheese pieces or grated cheese on top. And serve your egg platter hot. Relish with family!
