Ingredients

Cooking spray: 10 ml

Onion, chopped: 40 gm

Zucchini, chopped: 87.5 gm

Cauliflower, chopped: 60 gm

Water: 30 gm

Large egg whites: 10 no.

Garlic powder: 0.5 gm

Cayenne pepper: 0.5 gm

Salt: 1.5 gm

Black pepper, freshly ground : 0.5 gm

Pepperjack cheese, shredded: 30 gm

Method

Step 1

Preheat oven to degrees F ( degrees C).

Step 2

Coat a skillet with cooking spray and place over medium heat; cook and stir onion and zucchini until tender, to minutes.

Step 3

Place cauliflower in a microwave-safe bowl and add water; cook in microwave until cauliflower is tender, about minutes. Drain water.

Step 4

Whisk egg whites, garlic powder, cayenne pepper, salt, and pepper together in a bowl; add zucchini-onion mixture, cauliflower, and pepper jack cheese. Pour egg mixture into a -inch round pan.

Step 5

Bake in the preheated oven until quiche is set in the middle, about minutes.
