Ingredients

Onion, cut into thin slices: 100 gm

Garlic clove, minced: 10 gm

Olive oil: 15 ml

Lentils, rinsed and drained: 150 gm

Whole small fresh mushrooms: 50 gm

Carrots: 100 gm

Celery, chopped: 100 gm

Salt: 5 gm

Black pepper: 5 gm

Water: 400 ml

Vegetable broth: 500 ml

Napa cabbage: 100 gm (Any other vegetables)

Method

Step 1

In a -quart saucepan or dutch oven, cook onion and garlic in hot oil over medium heat for to minutes or until onion is tender, stirring occasionally.

Step 2

Add lentils; cook and stir for minute.

Step 3

Stir in mushrooms, carrots, celery, salt, and pepper.

Step 4

Add the water and broth. Bring to boiling; reduce heat. Simmer, covered, for to minutes or until lentils are tender.

Step 5

Top each serving with cabbage. Or any other vegetable of your choice.
