Ingredients

260gms whole wheat flour 🌾

150gms jaggery powder.

2 eggs 🥚🥚

160ml cows milk 🥛

100gms butter melted and cooled

2 1/2 tsp baking pwd

1 1/2 tsp vanilla extract

100gms chocolate chips

Method

Step 1

Preheat oven to ° C, and place oven rack in the center of the oven. Butter, or line with paper liners, muffin cups.

Step 2

In a bowl melt the butter, add the jaggery powder or grated jaggery and mix till well dissolved. If still hot let it cool till room temperature then whisk in the eggs one at a time, milk, and vanilla extract.

Step 3

In another large bowl whisk together the flour and baking powder. If using unsalted butter add / tsp salt.

Step 4

Stir in the chocolate chips. With a folk fold the wet ingredients, into the dry ingredients and stir only until the ingredients are moistened and combined.

Step 5

Do not over mix or you will have tough muffins.

Step 6

Evenly fill the muffin cups with the batter, using two spoons or an ice cream scoop. yes ice cream scoop is very useful here.

Step 7

Place in the oven and bake for about - minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 8

Transfer to a wire rack and let cool for about - minutes before removing from pan.

Step 9

Can be covered and stored at room temperature for a few days or they can be frozen n used for a few months.

Step 10

Makes regular sized muffins.
