How to make chicken with Leeks and Mushrooms Sauce with sautéed spinach on the side

Step-1

Take chicken breast rub it with salt, 1/4 tsp of crushed pepper, rosemary and little lemon juice and grill it or cook it on the pan in 4 ml olive oil until internal temperature reaches 70 degree c. Dont over cook it or chicken will become chewey. Take it out and keep it aside.

Step-2

In the same pan pour another 4 ml of olive oil and add your leeks/spring onions/ onions and sautée until tender.

Step-3

Add mushrooms and sautée again until tender

Step-4

Now add half of ginger garlic paste (you can add it before the leeks, if you dont like the strong aroma of ginger and garlic)

Step-5

Add salt, rest of the crushed pepper, soy sauce

Step-6

Add half cup of water and let it simmer until it reaches desired consistency.

Step-7

Switch off the stove and add 1 tsp of lemon juice. Mix and pour it over the prepared chicken.

Step-8

Just sautée your baby spinach lightly with the garlic and a little salt. Keep it as side with chicken.

Step-9

Garnish with green part of leeks or spring onions and enjoy!!
