Ingredients

Whole chicken 1.4kg (skinless)

Vinegar

Salt (For Marination)

Black Pepper (For Marination)

Curd 100gm (For Marination)

Coriander Leaves (For Marination)

Mint Leaves (For Marination)

6 Green Chillies (For Marination)

2 teaspoon Ginger/Garlic Paste (For Marination)

1 table spoon Coriander Powder (For Marination)

1 table spoon Cumin Powder (For Marination)

10 ml Olive Oil/Sunflower Oil (For Marination)

Lemon slices

Chaat Masala

1 Tomato

1 Onion

1 cucumber

2 Cardamom

2 brown bread slice

Method

Step 1

Wash the whole chicken well under running tap water. Make some gashes over the chicken's body with a knife.

Step 2

Take a container and prepare a solution of water and vinegar and immerse the chicken completely for minutes. This would remove the raw smell and blood stains.

Step 3

After minutes, take out the chicken and pat it dry softly with some tissue paper or a piece of clean cloth.

Step 4

Prepare the marinade by mixing the Salt, Black Pepper, Green Chillies, Coriander leaves, Mint leaves, Coriander powder, Cumin powder, Ginger/Garlic paste, Curd and olive oil in a blender.

Step 5

Take a container and place the whole chicken and pour the marinade over it and massage the entire chicken with the marination paste.

Step 6

Tie both the legs of the chicken with a piece of string and put it inside a steel bowl (as shown in picture)

Step 7

Take a pressure cooker (ltr), Pour enough water inside to make the water level half a finger deep.

Step 8

Place the chicken in the bowl inside that water. Close the lid of the pressure cooker and remove the cap. (Note - Remember to remove the cap on the lid otherwise, the chicken would get boiled.)

Step 9

Put the gas on high flame for minutes.

Step 10

After minutes, take out the chicken carefully so that it does not break.

Step 11

Heat up the juice from the chicken and the water I the pressure cooker. Add a teaspoon of Ghee and cardamoms inside the pressure cooker and let it boil for minutes. Add salt and lemon juice to for taste. Your Shorba is ready.

Step 12

Serve the chicken with onion-tomato-cucumber salad, shorba and brown bread slices.
