Cook plain rice and boil chicken breast in a pressure cooker separately. Once cooked, chop the chicken into small pieces. Add ghee to a Wok Pan on the burner, add finely chopped ginger, garlic, green chilly and onion. Sauté it with a pinch of salt and pepper and stir well. Add finely chopped mushrooms, cabbage and french beans and set the pan on simmer and cover with a lid, this allows the veggies to cook properly. Allow it to cook for 5-10 minutes and then create a well between the veggies. Break open two whole eggs, sauté it with a pinch of salt and pepper and stir well to mix with the veggies. Next, mix the finely chopped chicken pieces and keep stirring the contents gently. Finally, take the bowl of cooked plain rice and cook it with rest of the contents. Sauté it one last time with another pinch of salt and pepper and gently stir the contents to mix it well. Close the lid, turn off the stove and enjoy two wholesome servings of chicken egg fried rice.
