cheesy burnt garlic spinach soup

Spinach- 1 bunch ( 150 g)
Ghee / butter- 5 g
Garlic - 3-4 cloves (peeled )
Garlic - 1-2 cloves sliced for garnish
Ginger-small piece (1 cm )
Green chilli-1 ( as per your choice)
Salt
Rice / wheat flour- 5 g
Cheese cube -25 g (one )
Direction
Step-1
Clean and blanch spinach leaves
{how to blanch -boil water , add spinach leaves, cook it , remove leaves and add to cold water
Or microwave leaves in water ( till cooked)and add to cold water }
Step-2
Coarsely grind 3-4 cloves of garlic, ginger and green chilli
Step-3
In the same grinder jar add spinach leaves,1 tsp rice or wheat flour , salt
Step-4
Grind to form purée
Step-5
Now in a nonstick pan
add purée and heat on a medium flame and keep stirring till it thickens to soup consistency
Step-6
In a tadka pan or small pan heat 5g butter , add sliced garlic cloves, fry then brown , keep aside
Step-7
While serving add grated cheese and these burnt garlic cloves
