Ingredients

Big cauliflower cut in steak

Mix Whole spices (cardamom, clove, black pepper, bay leaf, cumin, cinnamon)

2-3 tomatoes roughly chopped

2 onion roughly chopped

2 inch ginger chopped

5-6 clove garlic

12-15 cashews/ almonds/ melon seed or mix of all (in small quantity)

Powdered spices (coriander powder, turmeric, red chilli powder, kashmiri chilli powder, kasuri methi, salt, white pepper poder, sugar)

Yogurt

Fresh cream optional

Oil

Method

Step 1

First to make cauliflower steak, cut the cauliflower in big strak type chunks and boil them in salted water for few minutes. After that brush them with little oil and cook on a grill pan or roast that in oven till tender. Meanwhile, we will cook our red sauce. For that, heat little oil in a kadhai. Add half of whole spices. When it starts to crack, add chopped onion. Sauté that for a while and then add garlic, ginger and tomato and - cashews or almonds or both (depends on u). Cook them till tender and then turn off the heat and let them cool down. Now grind them with some water and make a fine paste. If u want u can strain that also for super fine texture. Now add some oil, about a tea spoon in a kadhai and add Kashmiri chilli powder and ur red gravy paste. Sauté that for some time. Then add half of the powdered spices along with some sugar (little bit to balance the tomatoes) and some salt as per ur preference. Cook it till u get required thickness. Add some kasuri methi in the last. Now we will start our white gravy. For that in a pan or kadhai, boil some water and then add onion, ginger, garlic and leftover cashews.Let them boil for around - mins till tender. Cool them and grind them in a paste with the help of some water Next, take a tea spoon of oil in a pan. Add leftover whole spices and when they start to sputter, add white gravy paste and cook for some time. Now add salt, sugar and white pepper powder and yogurt. Keep whisking while adding yogurt till it starts to bubble. Now add some kasuri methi and add water as per ur desired consistency. Cook for - more minutes and ur white gravy is done. For assembling, first spread some red sauce/ gravy in the bottom. Add some white sauce/ gravy on top and then arrange ur cauliflower steak. Ur tasty cauliflower steak is ready to be served. ( u can add cream also to give it some more richness but look for ur calories 😊)
