Mayonnaise: 55 gm
Small baby potatoes: 150 gm
Rice flour: 20 gm
Melted butter: 20 gm
Water: Required to boil
Red chilli powder: 1 tsp
Chilli flakes: 1/2 tsp
Salt: To taste
Pepper powder: 1/2 tsp
Milk: 2-3 tbsp
Oregano: 1/4 tsp
Onion powder: 1/2 tsp
Garlic minced: 3-4 cloves
Lemon juice: 1/4 tsp
In a cooker, add potatoes and water and cook till two whistles.
Let it cool down completely.
Take potato on a flat surface and mash it down with palm.
Take rice flour add water to it and make a slurry of it.
Heat oil on tawa, dip each potato in slurry and roast them on tawa from both sides.
In another bowl mix mayo, chilli flakes, oregano, onion powder, garlic, salt, pepper powder, red chilli powder, lemon juice and mix well. Add milk to adjust consistency; the sauce is ready.
Take shallow cooked potatoes on a plate, pour cajun sauce on top and garnish with chopped onion green and red chilli powder. Garnish with coriander leaves and serve hot.
