How to make Cabbage rolls (keto)
Carefully peal off cabbage layers. I used 2 big layers (60gms) . Blanch them in boiling water with a pinch of salt. Drain n keep aside. This makes the cabbage soft and easy to roll up.
Clean, wash and roughly chop the spinach. Sautee it with a pinch of salt on high flame mixing continuously. Cook till the water content evaporates and the spinach is almost dry.
Mix together the spinach, minced chicken, paneer crumbled, cheese grated and all the seasonings. Stuffing is ready
Cut each cabbage leaf (layer) in 2 along the centre vein. I used 2 leaves so got r parts
Now divide the stuffing in 4 equal parts. place each portion on the halved leaf and roll it up.
Heat oil in a nonstick pan, carefully place the cabbage rolls n cook on medium heat covered. cook for about 2 to 3 minutes on each side.
