Ingredients for Butternut Squash Cous cous upma
- › Butternut squash chopped :150gms
- › Ghee :3gms
- › Cous cous soaked for halfan hour : 50gms
- › Cumin seeds : 1/4 tsp
- › Mustard seeds : 1/4tsp
- › Curry leaves :4-6
- › Green chillies chopped : 3-4 , adjust as per your spice level
- › Red chilli powder :1/4tsp : use as per your spice level
- › Onions chopped :45 gms
- › Turmeric powder :1/4 tsp
- › Salt as per taste
- › Lime juice :1/2 tsp
Method
1. STEPS: 1. Heat pan 2. Add cumin seeds and mustard seeds 3. Add curry leaves 4. Add green chillies and sort well 5. Add onions and saute till soft 6. Now add butternut squash and saute till soft 7. Now add salt and turmeric powder and chilli powder and saute for 2 mins 8. Now add soaked cous cous and saute well until everything is mixed well and cook in low flame for 2-3 mins 9. Now add some lime juice and mix well and serve hot with some salad /cucumber
