Ingredients

2 eggs

30gms rolled oats

5gms butter

25gms mushrooms🍄

30gms cherry tomatoes 🍅

50gms spinach 🥬

20gms cheddar cheese🧀

salt and pepper

Method

Step 1

Dry roast the oats in a pan. spread evenly in the pan.

Step 2

Beat the eggs with salt and pepper and pour over the roasted oats. Cover and cook for a few minutes.

Step 3

Sautee the spinach 🥬 and mushrooms 🍄 in another pan with some salt and pepper.

Step 4

Spread this over the egg layer. Top with halved cherry tomatoes 🍅 and cheese🧀.

Step 5

Sprinkle some oregano and paprika. Carefully fold the egg oats layer in half.

Step 6

Top with some more cheese, cover and cook for another minute.

Step 7
