Boiled Egg and Spinach sabzi (for two people)

8 Egg whites and 2 yolks
40 gm Spinach
1 Onion (114 gm)
2 tomatoes (176 gm)
28 gm / 1.5 tablespoons Ghee
Turmeric, coriander & cumin seeds powder, red chilli or any other home made dry masala powder
1 tsp cumin seeds
few curry leaves
Direction
Step-1
Add ghee in iron kadhai, add cumin seeds, curry leaves, chopped onion (let it brown a little)
Step-2
Add turmeric and other dry masalas
Step-3
Add chopped tomatoes (let it mash)
Step-4
Add chopped spinach (stir for a minute - Do not overcook)
Step-5
Add salt and add boiled eggs cut in half
Step-6
let it cook for 2-5 minutes
