How to make bhaji or mashed vegetables

Step-1

Pressure cook all the vegetables except chopped and diced tomatoes and capsicum in a pressure cooker until (2 whistles).

Step-2

Take a wok or Kadai and add 2 tsp cooking oil . let it heat up, add chopped capsicum and onions and roast them until lightly brown. Add turmeric powder, salt to taste, red chilli powder to taste. Now add the diced tomatoes and let it get mushy.

Step-3

open up the vegetables from the cooker, peel the potatoes and mash all the vegetables using a masher or spoon.

Step-4

add this mashed vegetables to the tomatoes. Add pav bhaji dry masala to taste. Squeeze half a lemon for its juice.

Step-5

Serve it hot with chopped onions, green corriander leaves and half tsp of butter ( optional).

Step-6

You can accompany it with either Pav/ indian bread ( roti).
