Grapeseed oil: 15 ml
Leeks: 500 gm
Vegetable stock: 1000 ml
Beans of your choice: 800 gm
Garlic: 20 gm
Milk: 150 ml
Salt and pepper: 5 gm
Heat the oil in a large pan, add the leeks and cook on low-medium heat for mins.
Pour in the stock, tip in the beans, cover and simmer for mins.
Add and stir garlic, cover the pan and cook for mins.
Add the milk with plenty of pepper, and blitz with a stick blender until smooth. Ladle into bowls and chill the remainder.
