1 cup garlic cloves
2 cups virgin olive oil
2 large eggplant
1/4 cup tahini sauce
1 lemon juice
1 tbps cumin powder
sea salt or kosher salt as per taste
pinch of cayenne pepper powder or red paprika
Add the garlic cloves and olive oil to a medium sized saucepan and put on stove on medium low heat for around - mins
Roast the eggplant on open flame for around minutes. Let them cool for around minutes
Once cooled, peel off the eggplant and let it rest in its own juices for around more minutes
Till the time your eggplant is resting, you can seperate the oil from garlic and you get roasted garlic along with roasted garlic olive oil. Save the oil for later
Now add the eggplant along with its juices to the food processor and blend it till we get a fluffy texture.
Once it has achieved smooth texture, add / cup of roasted garlic, tahini sauce, lemon juice
Now mix all of these in a pulsating fashion in you food processor adding / cup of roasted garlic olive oil in batches and your baba Ganoush should be ready in another couple of minutes
You can add you roasted garlic olive oil, some chopped parsley, coriander, more lemon juice and red paprika powder as garnish and as per taste
