Amaranthus leaves ,Tomato curry and Steamed rice
- 1.Amaranth Leaves- 100 gm
- 2.Onion-30 gm
- 3.Tomato - 20 gm
- 4.Coconut meat-30 gm
- 5.Oil-4 gm
- 6.Rice-45 gm
- 7.Corriander seeds,jeera,dry red chilles,curry leaves
- 8.green chilles and 2 pods of garlic
1.For Amanranth leaves veg In a pan add 2 gm of oil then saute green chilles and a garlic pod.Add Chopped Amaranth leaves and saute till it become soft.
2.For Tomato Curry In a pan dry roast corriander seeds,jeera and red chilles and 1 pod of garlic.
Once the mixture is cooled down, grind the above roasted mixture with coconut meat and tomato .
Before grinding add little turmeric to it.
Add 2 gm oil and give tadka of curry leave..let it simmer the tomato curry is ready
Serve with Hot Steamed rice
