Ingredients: Zucchini: 1medium (150gms) (0:4.6:0) Paneer: 50 grams (12.5:1:7) Coconut Milk: 50 grams (12:6:1) Cardamom Powder Coconut oil: 5 grams (5:0:0) Stevia (as per taste) Almonds: 4-5 (3:1.5:1.5) Rose water (optional) Dry rose petals to garnish (optional) Method : · Peel and Grate zucchini. · In a non-stick pan, heat the coconut oil and add grated zucchini after slightly squeezing the excess water. (do not squeeze it too much as we want the burfi to be moist) · Cook for 5-7minutes until it becomes tender. · Now add the Paneer and Cardamon Powder. · Cook, it for 5-7 minutes and add the coconut milk. · Keep stirring till excess moisture evaporates. · In the end, add stevia, a few drops of Gulab Jal and 1tsp Isabgol. · Mix well. Grease a small plate and spread the mixture evenly. · Garnish with chopped almonds and dry rose petals. Let it cool down and refrigerate for 30 minutes. · Cut into pieces and enjoy the burfis.
