Spanish omelette for dinner tonight 😋😋. So I had 3 eggs in my macros so used up 2 eggs and 1 cheese cube to replace one egg. Ingredients: 2 WholeEggs 1 Cheese Cube Chopped Capsicum, Chillies, tomato. Beat the eggs with a pinch of salt. Heat a non stick fry pan, add a teaspoon of Ghee or oil , or as per your macros. Pour the beaten egg, top with the chopped veggies while the top is still raw and runny, as you would for an uttapam. Top with grated cheese, sprinkle a little oregano. Let the base get cooked. Then without flipping the omelette, take the pan and stick it in a preheated OTG under the grill, keeping the pan in the top shelf, make sure to leave the handle of the pan sticking out of the oven so it doesn’t heat up. Remove when cheese melts or turns golden depending on how you like it. Slide it off to a plate and enjoy. You may add boiled chicken pieces or chopped mushrooms to the toppings. I have used 1 smoked chicken sausage.
