Spaghetti in burnt red pepper and garlic sauce
this is a different, quick and simple sauce than the common tomato or marinara sauce used for pastas. spaghetti - 50 gms black pepper powder, chilli flakes or powder, oregano oil-5gms red bell pepper-1 tomato 20gms garlic 2 cloves cheese slices 2 on gas stove, roast whole red pepper, tomato and garlic till charred on all sides. don't burn. remove them from gas and put in a bowl and cover for sometime so that the smokey flavour is well absorbed. remove the seeds from bell pepper and add it in blender with tomato and garlic and blend nicely till smooth. Add oil to a pan, handful of finely chopped spinach. saute. and then add the sauce. let it come to a boil. add black pepper powder and chilli flakes. in another pan boil water, add salt and then spaghetti. let it cook Al Dente (half-cooked). add some of the pasta water to sauce. the sauce swells up and becomes smooth. then add cheese slices and let it melt. once the pasta is cooked quickly add it to the ready sauce and toss. serve and slurrp!
