Ingredients : Brinjal – 1 large, cut into 2 halves Onion – half of one small size Tomato – 1 small Spinach Broccoli Garlic Cheese – 1 cube Butter/ghee – 1 spoon Salt to taste Note: You can adjust all the ingredients according to your macros Method: Scrape the two halves of the brinjal while making sure that you do not make holes in the shell. The scraped shell can be about 1 cm thick. Chop the scraped flesh into small cubes and reserve. Heat butter in pan, and fry all the ingredients one by one, till cooked. Preheat the oven to 190 degrees. Apply a little ghee on the inner part of the brinjal shells and sprinkle a little salt in it. Bake it for 5-7 mins in the oven. Then fill the cavities with the prepared filling and top it with cheese. You can alternate one layer of filling with one layer of cheese, if you wish (and IIFYM). Put it in the oven again, and bake it at 190 degrees for 20-22 mins. Voila! You can sprinkle your favorite spice mix or garnish with chopped spring onions/coriander/chilli flakes. Enjoy it hot!
