Tender jackfruit or kathal is a gourmet vegetable and in Bengal, it’s gacch-patha (tree mutton). Also, the fiber present helps keep you satiated for longer, making you skip binging on junk unnecessarily. Echor kosha or jackfruit curry is very nutritious and also serves a good option for vegetarian people an alternative to meat. Ingredients: (Per serving) 1/2 cup boiled jackfruit cubes 1 1/2 tsp mustard (rai / sarson) oil 1/8 cup chopped onions 1/4 tsp garlic (lehsun) paste 1/4 tsp ginger (adrak) paste 1 chopped tomato 1/4cup chopped coriander 1/2 tsp turmeric (haldi) powder 1/4 tsp chilli powder 1/4 tsp cumin seeds (jeera) powder 1/8 tsp garam masala Heat a non stick pan, add the oil, once hot, add the chopped onion and saute till golden brown. Add the ginger garlic paste and fry for a while. Then add all the spices, half of the coriander leaves and tomato, saute till u get a good brown colour and the spices starts to leave the oil. Now add the boiled jackfruit pieces mix well and add salt to taste. Mix and stir a while. Add some water for the gravy and cook with a covered lid for about 10 minutes in low flame. Once done garnish with the remaining coriander. Serve with roti or rice
