Methi Dana laddoo (Fenugreek laddoos)
Made for my mom. Her hectic schedule and negligence towards health.... one piece of this can be quite filling. She has diabetes as well. Ingredients 200 gms (1cup) Methi(Fenugreek seeds) 2 cups Wheat flour 1 cup Khajur(Date)powder 1 cup ghee 1/4 cup flaxseeds 21/2 tbsp dry ginger powder 1 tsp black pepper powder 1/2 cup raisins 1/4 cup almonds (Finley chopped) 10-15 cashewnuts finely chopped 1 cup Gretted Dry coconut 100 gms Gond katira(gum herb) 500 gms jaggery 1 tsp cardamom powder for flavour(optional) First take a cleaned fenugreek seeds and make a fine powder Take a kadhai add 1/2cup +1 tbsp ghee and heat when oil is heat add gond and fry it when gond is pops remove a it into a plate After frying all gond excess ghee littile cool it and mix ghee and fenugreek powder and soak it at least 1 hour After I minut take kadhai add soaked fenugreek powder and fry golden brown colour when it's fryed properly then add chopped cashew nuts, almonds,and raisins and mix properly now take out transfer this mixture into a plate Now take a pan another pan dry roast flaxseeds and take out into a plate Now add a gretted dry coconut and dry roast Now take a kadhai heat 2 tbsp ghee add wheatflour and stir fry golden brown colour and take a another pan add jaggery and melt jaggery on a low flame keep stirring 1,2 minutes When wheatflour turned golden brown colour then add fenugreek powder and dry fruits mixture and mix it properly now add dry ginger powder,flaxseeds, black pepper powder,and powder date(sukha khajur) and mix again properly Now switch off the flame transfer this mixture into a plate now add gond katira powder and gretted dry coconut and mix it now add melted jaggery give a good mix and keep a side When this mixture littile child mix it properly in your hand and make a laddu and store it air tight container in 1,2 wmonths easily make this ladoo and enjoy this winter!
