Mexican Fried Rice and Sauteed Vegetables
1. Cook rice and let cool completely. 2. Heat oil in a broad non stick pan. 3. Add sliced onions and saute for 1-2 minutes. 4. Add coarsely ground chilli garlic paste, tomatoes and sliced capsicum. Sautee for 1 minute. 5. Add salt and sprinkle some water. Saute for 2 minutes. 6. Add more boiled veggies of your choice.(I added only french beans). Cook for 1 minute. 7. Add cooked rice, sprinkle salt and cook for 2-3 minutes. Rice is ready to serve. Sauteed vegetables contains zucchini, mushrooms, red and yellow bell peppers, cherry tomatoes. Macros mentioned are only for rice and oil.
